Kaddu Ka Halwa/Pumpkin Halwa/Gummadikaya Halwa/Pethe Ka Halwa – Instant Pot Method
Kaddu Ka Halwa is a traditional Indian dessert made with pumpkin. Just few days back, after making a delicious pumpkin stew a big piece of pumkin was lying in my refrigerator and I didn’t want it to go to waste. I wanted to try making a traditional dessert with this piece of pumpkin and started searching for the recipes. I found a nice recipe here. The blogger had mentioned that it was her grand mother’s recipe. She shared the stove top pressure cooker version of the recipe in her blog. After reading about that recipe I decided to give it a try and it turned out delicious. I learnt that this dessert is also known as Pethe Ka Halwa and is usually made during Navratri fasting period.

I prepared it using Instant Pot pressure cooker. I reduced the amount of sugar as per my taste. I am sharing the instant pot version of the recipe here.
Lets begin the process by keeping all the ingredients ready.
Measuring cup used: 1 cup = 250ml
Pumkin (peeled, deseeded and cut into 1″ cubes) – 3 cups
Raw Sugar/Granulated White Sugar – 1/2 cup
Ghee – 3 Tbsp.
Melon seeds – 1 Tbsp.
Water – 1 cup
Almonds, Walnuts or Pistachios – optional(I did not add them)
Note: I have used raw sugar. Granulated white sugar can also be used. Adjust the sugar quantity as per your taste.
We need to saute the pumpkin pieces in ghee. Choose a pumpkin that is yellow from inside because they tend to be sweeter.(Important).
Add 3 Tbsp. ghee in the in the instant pot steel insert. Turn on the ‘Saute’ mode. Add the chopped pumpkin cubes and saute for 5-6 minutes until you can smell a nice aroma releasing from the sauteed pumpkin pieces. They start sweating and releasing some of its water. Add 1 cup water. Close the lid and cook on manual high pressure setting for 10 minutes with the Vent in sealing position.
Pumpkin pieces can be cooked in a regular pressure cooker or in a sauce pan on the stove top. Cook for 5-6 whistles in a regular pressure cooker.
Open the lid only after the pressure is released naturally. The pumpkin pieces should be very soft and thoroughly cooked at this point.(This is important).
If the pumpkin pieces are not thoroughly cooked, you should cook again for few more minutes.
Mash the pumpkin cubes using the back side of the ladle. Turn on the ‘Saute’ mode. Press ‘Adjust’ button twice to saute on low heat. Cook for 4-5 minutes until the water starts evaporating. Keep stirring continuosly to make sure it doesn’t stick to the bottom.
Add sugar and cardamom powder and continue to cook for another 12-15 minutes until the water is almost evaporated. Cook until halwa starts leaving the sides of the pan. Turn off the instant pot.
Transfer the prepared halwa into a serving bowl. Garnish with melon seeds on top. You can also add chopped almonds, cashews or pistachios.
The melt in the mouth delicious halwa is ready to serve. Serve hot.
